Black Bean Soup

We have brought to you an easy-to-follow black bean soup recipe. This vegetarian black bean soup is a healthy, low-fat dish that can be prepared in less than 15 minutes.

  1. Using a food processor or potato masher, mash 15 ounce of black beans
  2. In a medium-sized saucepan, put the mashed beans with the remaining 15 ounce of (un-mashed) beans, and mix them with the salsa, chili powder and vegetable broth.
  3. Place the saucepan over medium-to-high heat; when the mixture starts boiling, top it with the sour cream, shredded cheese, cilantro and onion.
  4. Divide the black bean soup into four soup bowls and serve hot. This soup tastes best when served on a snowy cold day.
