Grilled Mushroom Risotto: A Tasty Way to Enjoy Healthy Foods

  1. Have the stock heated in your saucepan. Keep it simmering on a low level. Put in a bowl the porcini mushrooms and pour sufficient amounts to have the hot stock covered. Allow it to be cooked for a few minutes ‘till they become soft. Remove them from the stock and have them chopped. Set aside the soaking liquid.
  2. Using a huge pan, heat olive oil, then add celery and onion. Fry slowly without coloring for more or less 10 minutes. Raise heat level, then add rice and stir. Mix in wine or vermouth. Keep on stirring ‘till the liquid gets thoroughly cooked into the rice. Add porcini soaking liquid using a sieve into your pan, then put chopped porcini, hot stock and a pinch of salt. Reduce heat, allow it to simmer, keep on adding stock, stirring, then massaging starch from the rice, allowing every ladleful to get absorbed before you add the next batch.
  3. Keep on adding stock ‘till the rice turns soft but with minimal bite. The process will take around 30 minutes. While doing this, grill on a dry griddle pan the mushrooms until they turn soft. Grill in batches if you’re using a small pan. Then place them into a bowl, combining them with lemon juice, salt and chopped herbs. Use your hands to toss the ingredients together.
  4. Remove the risotto you’re cooking off the heat, then carefully check the seasoning. Mix in the Parmesan and butter. If you wish to have oozy and creamy texture, put more stock if you believe that doing such is a need. Cover the mixture and allow the risotto to get relax for more or less three minutes.
  5. Get you risotto. Add a bit more Parmesan or seasoning, if that is what you prefer. Serve a good amount of risotto with some grilled dressed mushroom topping, a drizzle of olive oil or sprinkles of Parmesan which has been freshly grated.
